Welcome to the World of Microgreens
A Fresh-Picked Guide from Dare 2 Dream Farms
Imagine the smell of clean earth after the rain, the snap of a crisp pea on a spring morning, the bright burst of green in a salad that suddenly wakes up your taste buds. That’s the power of microgreens — nature’s fresh, clean, and nutrient-dense food. Microgreens are one of our favorite little miracles—tiny leaves packed with vitamins, minerals, phytochemicals, and a surprising amount of flavor. Whether you’re new to microgreens or already tossing them on everything, this guide is here to inspire and inform your next handful.
🌿 What Exactly Are Microgreens?
Microgreens are young vegetable greens, harvested just after they sprout their first true leaves. They’re not sprouts, which are grown in water and eaten root and all. And they’re not baby greens either, which are larger and harvested later. Microgreens are somewhere in between—vibrant, tender, and bursting with life.

You’ll find them in many varieties, including:
- Sunflower Shoots – our most popular: crisp, nutty, and satisfying
- Pea Shoots (pictured above) – delicate and sweet with tendrils that love to climb
- Radish Microgreens – peppery and bold, with a kick like fresh horseradish
- Broccoli Microgreens – mild, tender, and packed with nutrients
- Mustard & Arugula Microgreens – spicy little powerhouses
- And many more seasonal favorites and mixes grown with care
Why Microgreens Deserve a Place on Your Plate
Don’t let their size fool you—microgreens are tiny nutritional powerhouses. They can provide a huge boost of freshness, color, and flavor in a small garnish, or as a major part of a meal. These little greens offer:
- Big flavor – from sweet and mild to bold and spicy, microgreens add freshness to any dish
- Nutrient density – some varieties contain up to 40 times more nutrients than their mature counterparts
- Freshness you can taste – harvested just hours before market, they bring that just-picked crispness straight home
- A sustainable food choice – grown locally, in soil, with minimal waste and no synthetic chemicals
We love that these greens connect us to our food in a way that’s simple, intentional, and very much alive.
How to Use Microgreens in Everyday Meals
One of the best things about microgreens? There’s no wrong way to eat them and there’s no prep required. They can be a garnish, a topping, and so much more. Here are some of our favorite ways to use them:
Simple & Fresh:
- Sprinkle on scrambled eggs, potatoes, breakfast toast, lox, or hummus wraps
- Toss into salads, grain bowls, or pasta dishes just before serving
- Blend into smoothies or pesto for a hidden nutritional boost (broccoli microgreens are especially great)
- Use as a beautiful garnish on soups, chili, tacos, pizzas, and more
For the Creative Cooks:
- Layer in sandwiches and wraps for crunch and color
- Pair spicy radish greens with fatty meats or cheeses for contrast
- Use pea or sunflower shoots in stir-fries—add at the end for just a kiss of heat
Let the season and your imagination guide you. 🌱

Storing Your Microgreens for Freshness
We harvest and package our microgreens with care, so they stay fresh as long as possible. To make the most of your greens:
- Keep them refrigerated, ideally between 34–38°F
- Do not wash until you’re ready to eat—extra moisture shortens shelf life
- Store in a sealed container or their original packaging to avoid drying out
- Use within 5–7 days for best flavor and texture (though some hold even longer)

Treat them gently, and they’ll reward you with vitality in every bite.
Meet Our Microgreens
Every tray of greens begins with rich, homemade potting soil, clean water, sunlight, and a whole lot of love. Here’s a peek at some of our staple varieties:
🌻 Sunflower Shoots
Crisp, juicy, and full of crunch. Think fresh-from-the-garden snap peas meets sunflower seeds. A kid favorite! Good enough to eat straight from the package.
🌿 Pea Shoots
Bright and sweet, with delicate leaves and curly tendrils. Beautiful in a salad, but also delicious sautéed for a warm side.
🌶 Spicy Microgreens
A colorful blend of red and green mustards with various textures. Spicy, sharp, and bold—spicy micros add a kick to everything from tacos to grilled cheese sandwiches.
🥦 Mild Microgreens
Mix of mizuna, cabbage, kale, and kohlrabi greens. Mild in flavor but rich in sulforaphane, a compound known for its antioxidant properties. A great “starter green” for the micro-curious.
You’ll find other surprises throughout the year, depending on what we’re growing!
❓ Frequently Asked Questions
Can I cook microgreens?
Absolutely! While most people enjoy them raw, some like to lightly sauté heartier microgreens such as pea shoots or stir in sunflower shoots at the end of a warm dish.
Are they safe for kids?
Yes! In fact, they’re a great way to sneak greens into picky eaters’ diets.
Can I regrow them?
Nope — microgreens are harvested once. But they’re easy to start in a tray on your windowsill, especially as a project with the kids.
How are microgreens different from sprouts?
Sprouts are grown entirely in water and eaten roots and all. Microgreens are grown in soil and harvested above the roots — safer, tastier, and more versatile.
