Planting Garlic, Planning Apples, and Finding Our Fall Rhythm | Harvest Oct 30, 2025

This week we put 80 pounds of garlic in the ground in Section 8—the ground that grew our corn, butternut, and delicata squash this summer. The work took a lot longer than we thought it would, but the soil is still rich with nutrients from serving as home to the cows early last year, and we’re already spotting the first green shoots pushing up—along with a few volunteer corn sprouts that didn’t get the memo that summer has passed.

Inside the dungeon, where we start our seeds, we’ve been working to improve our microgreens. We’re dialing in routine, and variety, adding more trays and new blends: sunflower shoots, pea shoots, spicy mix, and mild mix. The goal is to offer fresh micros more often through the colder months when the big crops slow down.

And they are slowing down. The heirloom tomatoes, zucchini, and eggplant are really tapering off now that the days are shorter and the nights are chilly. Trays of brassicas and lettuce we have started with Jeremy’s new vaccuum seeder are filling the benches—broccoli, cauliflower, kale, and salad mixes that will nourish us over winter.

We’ve also been researching apple varieties and grafting techniques as we plan to add 40–50 trees over the next few seasons. We looked hard at citrus also, but learned through research that the more cold-tolerant the variety, the less flavor it tends to have. Chances are that the cara-cara, blood oranges, and mandarins we were hoping for wouldn’t taste the way we remember them when they’re grown in the valley. So we’ll likely plant lemons and turn our focus to apples.
